Whipped Butter

    Make whipped butter

    Place the 4 tablespoons softened unsalted butter, 1 teaspoon powdered sugar, 1/4 teaspoon vanilla, and 1/8 teaspoon salt in a small bowl. Using a handheld mixer or a fork, whip the mixture until light and fluffy, about 1–2 minutes. Transfer to refrigerator while you prepare the batter so it firms slightly but remains spreadable.

    Prepare custard

    In a shallow wide bowl or pie plate, whisk together 3 large eggs, 1 cup whole milk, 1/4 cup heavy cream, 1 tablespoon granulated sugar, 1 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon fine salt until smooth and slightly frothy.

    Soak bread

    Heat a large skillet or griddle over medium heat. Melt about 1 tablespoon of the unsalted butter to coat the surface. Meanwhile, working one slice at a time, hold a slice of thick bread and submerge both sides in the custard for 10–15 seconds per side (longer for very thick or denser bread) until the bread soaks but does not collapse. Let excess drip back into the bowl.

    Cook the slices

    Add remaining 1 tablespoon butter to the skillet. Place soaked slices in the skillet without crowding (cook in batches if needed). Cook over medium heat until golden brown and set, about 3–4 minutes per side. Adjust heat so exterior browns evenly without burning and interior cooks through. Total cooking time per slice ~6–8 minutes. Transfer cooked slices to a wire rack or warm plate; keep warm in a 200°F (95°C) oven if cooking in batches.

    Plate and finish

    Arrange three slices of hot French toast on a plate. Using a knife or small spatula, dollop or spread a generous spoonful (about 1–2 tablespoons each) of the chilled whipped butter atop each slice or in the center for the purist presentation. Lightly dust the entire stack with 1 tablespoon powdered sugar through a fine sieve. Serve immediately with optional maple syrup on the side (about 2 tablespoons).
