    Make custard

    In a shallow wide bowl or pie plate whisk together the whole milk, heavy cream, eggs, granulated sugar, vanilla extract, ground cinnamon, and fine salt until fully combined and slightly frothy.

    Soak bread

    Lay the three thick slices of brioche or challah in the custard, pressing gently so the custard soaks into both sides. Let sit for 30–60 seconds per side for thick slices (longer if bread is very dense) until bread is saturated but not falling apart. Transfer to a wire rack while you heat the pan.

    Cook

    Heat a large nonstick or cast-iron skillet over medium heat. Add the 2 tablespoons unsalted butter and swirl until melted and foaming. Place soaked slices in the skillet without crowding (work in batches if needed). Cook 3–4 minutes per side, or until golden brown and cooked through—adjust heat as needed so the exterior browns without burning before the center sets. Total cook time about 6–8 minutes per slice. Transfer cooked slices to a warm plate and keep in a low oven (150°C/300°F) if cooking in batches.

    Whipped butter

    In a small bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the room-temperature unsalted butter (2 tbs) and 1 teaspoon granulated sugar. Beat on medium-high until light and fluffy, about 1–2 minutes. Gradually add the whipping cream (2–3 tablespoons at a time) and continue beating until the mixture is spreadable and whipped, about 1–2 more minutes. You want a buttercream-like texture that holds shape but spreads easily. Refrigerate briefly if it becomes too soft.

    Assemble and finish

    Place three warm French toast slices on a serving plate (Menage a Trois). Dust evenly with the powdered sugar (about 2 tablespoons). Add a generous dollop or two of the whipped butter on top or on the side. If desired, drizzle with maple syrup (optional) and scatter fresh berries (optional) around the slices. Serve immediately while warm.
