Shake base
Add pineapple juice, cream of coconut, coconut rum, fresh lime juice and ice to a cocktail shaker. Seal and shake vigorously for 10–15 seconds until well chilled and slightly frothy.

Strain
Strain the shaken mixture into a chilled champagne flute or coupe, leaving room for the sparkling wine (about 1/2 inch at the top). If you prefer a colder drink, strain over a large ice cube in a rocks glass instead.

Top with champagne
Gently pour chilled champagne or sparkling wine down the side of the glass to top the drink (about 2 oz). Stir very gently once to integrate without losing too much effervescence.

Skewer or perch a pineapple wedge on the rim and sprinkle toasted coconut flakes on the wedge or rim if using. Add a mint sprig for aroma if desired. Serve immediately.
