Egg & Sausage Scramble

Cook sausage
Heat a large nonstick skillet over medium-high heat. Add the breakfast sausage (break it up with a spatula). Cook, stirring occasionally, until browned and cooked through, about 6–8 minutes. Use a slotted spoon to transfer cooked sausage to a plate lined with paper towel, leaving rendered fat in the pan. If there is excessive fat, drain leaving about 1 tablespoon.

Scramble eggs
Reduce heat to medium-low and add 1 tablespoon butter to the pan with the sausage fat. Pour in the whisked eggs. Let sit briefly until edges set (15–20 seconds), then gently stir with a rubber spatula, folding eggs until mostly set but still creamy, 1–2 minutes. Remove from heat and fold in the cooked sausage. Keep warm.

Sauté aromatics and peppers
In a second skillet, heat 1 tablespoon cooking oil over medium heat. Add the diced onion and sauté until softened and translucent, about 4 minutes. Add both diced bell peppers and continue to cook until peppers are tender-crisp, about 3–4 minutes. Season with smoked paprika and garlic powder while cooking.

Warm queso
Place the cubed queso in a small saucepan over low heat. Add 2 tablespoons half-and-half or milk and stir constantly until melted and smooth, 4–6 minutes. If too thick, add up to 1 tablespoon more milk. Stir in hot sauce if using. Keep warm on the lowest heat, stirring occasionally.

Toast bread & warm fries
Lightly butter each split English muffin or roll. Toast on a griddle or skillet over medium heat until golden and warmed through, 1–2 minutes per side. If the hoe fries are pre-cooked, reheat them in a 425°F (220°C) oven or a hot skillet for 6–8 minutes until crispy. Toss fries with 1/2 teaspoon salt and a pinch of smoked paprika.

Assemble sandwiches
Place a generous spoonful of the egg-and-sausage scramble on the bottom half of each toasted muffin. Top with a few spoonfuls of the sautéed peppers and onions, then add 1/4 cup warmed queso over the eggs (about 2 tablespoons per sandwich). Arrange 1/2 cup hoe fries on top of the queso (or serve fries on the side). Close sandwiches with the top half of the muffin.

Optional finish
If you want the cheese more melted into the sandwich, place assembled sandwiches on a baking sheet and put under a broiler for 30–60 seconds just to heat through and meld (watch carefully to avoid burning).
