Whiskey Cocktail

1. Combine ingredients

If using egg white: separate one egg and add only the white to a cocktail shaker. Add 2 oz Irish whiskey, 0.75 oz fresh lemon juice, and 0.75 oz simple syrup to the shaker.

2. Dry shake (if using egg white)

Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify the egg white and create foam. If not using egg white, skip to the next step.

3. Shake with ice

Open the shaker, add a large handful of ice, reseal, and shake hard for 12–15 seconds until the shaker is very cold to the touch and the exterior is frosted.

4. Strain

Double-strain the cocktail through a Hawthorne and fine-mesh strainer into a chilled coupe or rocks glass over one large ice cube (for a rocks glass) or neat in a coupe.

Garnish & Finish

5. Add 2 dashes of Angostura bitters on the foam or surface. Express oils from a lemon twist over the drink by pinching the twist skin-side down above the glass, then drop the twist into the drink (or float a lemon wheel on the surface). Serve immediately.
