Pea Blossom Tonic Infusion (makes ~4 oz)

Method

Pea Blossom Tonic Infusion (prepare ahead)

Steep

Place the dried butterfly pea flowers in a heatproof container. Pour the hot water (just off boil) over the flowers and let steep for 5–8 minutes until a deep blue/purple color develops.

Strain & sweeten

Strain out the flowers through a fine mesh or tea strainer into a small container. If you prefer a touch of sweetness to balance the gin and tonic, stir in up to 0.25 oz simple syrup while the infusion is warm. Let the infusion cool completely (refrigerate if needed). Yields about 4 oz of concentrated pea blossom infusion.

Note on color change

If you want a purple/pink twilight effect, the lemon juice in the cocktail will shift the blue infusion toward purple — this is expected and desirable.

Cocktail Assembly

Chill a highball or Collins glass by filling it with ice and setting it aside while you assemble the drink.

Discard the chilling ice and fill the chilled glass about three-quarters full with fresh ice.

In a mixing glass or shaker filled with ice, combine 2 oz Western Son Gin, 0.5 oz cooled pea blossom infusion, and 0.5 oz fresh lemon juice. Stir gently for 10–15 seconds to chill and dilute slightly. (If you prefer more color shift, add the lemon juice last in the glass instead of pre-mixing.)

Strain the gin mixture into the prepared glass over fresh ice.

Top gently with 3 oz Fever-Tree Indian Tonic Water. Pour slowly over the back of a spoon or down the side of the glass to preserve carbonation and create a layered look if present.

Gently stir once with a bar spoon to integrate the tonic and infusion without losing too much fizz.

Garnish with a lemon wheel or twist on the rim and float an edible pea blossom or small flower on top if available.

Serving & Notes

Serve immediately while chilled and fizzy. The lemon juice will cause the blue pea blossom infusion to shift toward purple/pink, producing the 'twilight' color. Adjust pea blossom infusion quantity (0.25–0.75 oz) for more or less floral intensity and color.

If preparing multiple drinks, scale the pea blossom infusion proportionally (2 tsp flowers per 4 oz hot water yields about 4 oz infusion). Store any leftover infusion refrigerated for up to 48 hours.
