Prepare

Chill a coupe or rocks glass by filling it with ice water while you build the drink. If using fresh citrus, squeeze enough lemons to yield 0.75 oz of juice (about half a lemon).

Dry shake (if using egg white)

In a cocktail shaker, add 2 oz Four Roses Bourbon, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.25 oz orange liqueur (if using), 2 dashes Angostura bitters and 0.5 of an egg white. Seal the shaker and dry shake (no ice) vigorously for 15–20 seconds to emulsify and create a frothy texture.

Shake with ice

Add a large handful of ice to the shaker (about 4–6 ice cubes or ~1 cup). Shake hard for 10–15 seconds until the shaker is very cold to the touch and the exterior is frosted.

Strain

Dump the ice water from the chilled glass. Double strain the cocktail through a fine mesh strainer (or julep strainer plus small sieve) into the chilled coupe or a rocks glass over fresh ice, depending on whether you prefer served up or on the rocks.

Garnish and finish

Express the oils of a lemon twist or orange peel over the drink by holding the peel skin-side down and giving it a firm snap over the surface, then run the peel around the rim and drop it into the glass. Optionally add one more dash of Angostura bitters on the foam for aroma. Serve immediately.
