Prep
Preheat oven to 425°F (220°C). Trim the stem ends of the Brussels sprouts and remove any loose or yellow outer leaves. Cut larger sprouts in half lengthwise so halves are roughly uniform; leave small ones whole.

Prepare bacon
Cut bacon slices crosswise into 1-inch pieces. In a large ovenproof skillet (cast iron preferred) or rimmed baking sheet, arrange bacon pieces in a single layer. Place in the preheated oven for 8–10 minutes until they begin to render fat and start to crisp but are not fully crunchy.

Add Brussels
Carefully remove skillet/sheet from oven. Using tongs, transfer hot bacon (and any fat) to one side of the pan leaving some fat in the pan. Add olive oil to the pan fat if needed (about 1 tablespoon total fat+oil). Add Brussels sprouts cut-side down in a single layer. Sprinkle kosher salt and black pepper evenly over the sprouts.

Roast
Return pan to oven and roast for 18–22 minutes, turning once halfway through, until sprouts are tender and edges are deeply browned and caramelized and bacon is crisp. If using a baking sheet, toss bacon pieces with sprouts once halfway through so both crisp evenly.

Make glaze
While the sprouts finish roasting, whisk together honey, apple cider vinegar, Dijon mustard, red pepper flakes, and fresh lemon juice in a small bowl until smooth.

Glaze sprouts
When Brussels and bacon are done, remove the skillet from the oven. Drizzle the honey glaze evenly over the hot sprouts and bacon. Using a spatula or tongs, toss gently to coat and let the heat reduce the glaze for 1–2 minutes so it thickens and becomes sticky. Taste and adjust salt/pepper if needed.

Finish & serve
Transfer to a serving dish (or serve straight from the skillet). Sprinkle toasted sliced almonds and chopped parsley over the top if using. Serve immediately while hot.
