Chill glass
Place an old-fashioned glass in the freezer or fill it with ice water to chill while you prepare the drink (3–5 minutes).

Measure and combine
In a mixing glass or shaker tin, pour 2 oz rye whiskey or bourbon, 0.25 oz simple syrup, 2 dashes Angostura bitters and 1 dash orange bitters (if using).

Add ice and stir
Add several large ice cubes to the mixing glass. Stir briskly but smoothly for 20–30 seconds (about 15–20 full strokes) until the mixture is well chilled and slightly diluted — the spoon should feel cold to the touch.

Prepare serving glass
Discard the chilling ice water from the old-fashioned glass (if used). Add one large clear ice cube or 2–3 fresh large ice cubes to the chilled glass.

Strain
Strain the mixed cocktail into the prepared old-fashioned glass over the large ice cube(s).

Express and garnish
Take the orange peel and hold it over the drink, skin side down. Give a firm twist to express the oils over the surface of the cocktail, then rub the peel around the rim and drop it into the glass. Add a Luxardo cherry if desired.

Optional smoke finish
If you want a smoky presentation reminiscent of a high-end bar: place a cover over the glass, introduce smoke from a smoking gun or briefly capture a small piece of charred wood under the cover, then uncover and serve to capture the aroma. Use caution with open flame or hot embers.
