    Prepare cocktail

    If using egg white: add 2 oz bourbon, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.5 egg white, and 2 dashes Angostura bitters to a cocktail shaker. If not using egg white: omit the egg white and use the same amounts of bourbon, lemon juice, simple syrup, and bitters.

    Dry shake (when using egg white)

    Seal the shaker and shake vigorously without ice for about 15–20 seconds to emulsify the egg white and create a froth.

    Wet shake

    Add ice to the shaker (enough to fill) and shake hard for 10–15 seconds until well chilled and the outside of the shaker is frosty. If you did not use egg white, just combine ingredients with ice and shake 10–12 seconds.

    Strain

    Double-strain the cocktail into a chilled old-fashioned glass over a single large ice cube (or strain into a coupe if you prefer without ice). Use a fine mesh strainer if you used egg white to catch any small solids.

Garnish & Finish

    Express the lemon twist over the drink to release oils, then rub the peel on the glass rim and drop it into the drink.

    Add 2 small drops/dashes of Angostura bitters onto the foam (if present) and, if desired, use a toothpick to make a simple decorative swirl.

    Serve immediately with one large ice cube (for an old-fashioned style) or without ice in a coupe. Enjoy.
