    Prepare

    Chill a coupe or martini glass by filling it with ice water, or place it in the freezer for a few minutes while you mix the drink.

    Dry shake (if using egg white)

    In a cocktail shaker, combine the gin, creme de violette, fresh lemon juice, simple syrup, and egg white. Seal the shaker and shake vigorously without ice for about 15 seconds to emulsify and create foam.

    Wet shake

    Add ice to the shaker (about 4–6 large cubes or roughly 1 cup). Shake hard for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly frothy.

    Strain and serve

    Discard the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine-mesh strainer to remove ice shards and any coagulated egg white.

    Garnish

    Express a lemon twist over the drink to release oils and either discard or lay it on the rim. Alternatively, drop a brandied cherry into the glass for a classic look. Serve immediately.
