Cook the Pork
In a slow cooker, combine the pork shoulder, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Pour the apple cider vinegar and water over the pork. Cover and cook on low for 8-10 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and mix it with the remaining juices.

Make the Jalapeno-Lime Mayo
In a small bowl, mix 1/2 cup of mayonnaise with the juice of 1 lime and 1 minced jalapeño. Stir until well combined.

Prepare the Tacos
Warm the corn tortillas in a skillet or microwave. Fill each tortilla with a generous amount of pulled pork. Top with pico de gallo and fresh cilantro.
