    Prepare the Sweet Potatoes

    Peel and chop the sweet potatoes into cubes. Boil in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

    Make the Dumpling Dough

    In a large bowl, mash the sweet potatoes. Add flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add more flour as needed.

    Shape the Dumplings

    Roll the dough into small balls (about the size of a golf ball) and then flatten them slightly. You can stuff each dumpling with a small amount of mascarpone cheese if desired.

    Cook the Dumplings

    Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water in batches. Cook until they float to the surface, about 3-5 minutes. Remove with a slotted spoon.

    Prepare the Brown Butter Sauce

    In a skillet, melt butter over medium heat. Add fresh sage leaves and cook until the butter turns golden brown and the sage is crispy. Remove from heat.
