Method

Preparation Steps

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine dark chocolate and butter. Melt over a double boiler or in the microwave until smooth. Set aside to cool slightly.

  2. 2

    Prepare Cream and Coffee Mixture

In a separate saucepan, heat the heavy cream and espresso coffee over medium heat until just simmering. Remove from heat.

  3. 3

    Mix Eggs and Sugar

In a mixing bowl, whisk together the eggs and sugar until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Slowly pour the warm cream and coffee mixture into the egg mixture, whisking constantly to avoid scrambling the eggs. Then, add the melted chocolate and butter, along with vanilla extract and sea salt. Mix until fully combined.

  5. 5

    Bake the Oscura

Preheat your oven to 180°C (350°F). Pour the mixture into a greased baking dish and bake for about 25-30 minutes or until the edges are set but the center remains slightly jiggly.

  6. 6

    Cool and Serve

Allow the Oscura to cool for at least 10 minutes before slicing. Serve warm or at room temperature, optionally dusted with powdered sugar or accompanied by a scoop of vanilla ice cream.
