Method

Cooking the Pork Belly

    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Season the pork belly with salt and black pepper on all sides.

    Roast the Pork Belly

    Place the seasoned pork belly in a roasting pan and cover it with foil. Roast in the oven for about 2.5 to 3 hours, or until tender.

    Glaze with Miso BBQ Sauce

    Remove the foil and brush the pork belly with miso BBQ sauce. Increase the oven temperature to 400°F (200°C) and roast for an additional 15-20 minutes until caramelized.

Pickling the Veggies

    Prepare the Pickling Solution

    In a saucepan, combine rice vinegar, sugar, and salt. Heat until sugar dissolves.

    Pickle the Vegetables

    Place sliced cucumbers and julienned carrots in a jar. Pour the hot pickling solution over the veggies. Let it cool to room temperature and refrigerate for at least 1 hour.

Toasting the Benne

    Toast the Benne Seeds

    In a dry skillet over medium heat, toast the benne seeds until golden and fragrant, about 5 minutes. Stir frequently to avoid burning.

Serving

    Slice the roasted pork belly and serve it topped with pickled veggies and toasted benne seeds.
