Harvesting Sap
Collect sap from mature sugar maple trees during the spring season when temperatures are above freezing during the day and below freezing at night.

Boiling the Sap
Filter the collected sap to remove any debris, then pour it into a large, shallow pan. Heat the sap over a wood fire or a stovetop to evaporate the water content. This process can take several hours.

Finishing the Syrup
When the sap reduces to about 66% sugar content, it is ready to be filtered again to remove impurities. Continue boiling it until it reaches a temperature of 219°F (104°C) at sea level.
