Preparation

  1. 1

    Harvesting Sap

Collect sap from mature sugar maple trees during the spring season when temperatures are above freezing during the day and below freezing at night.

  2. 2

    Boiling the Sap

Filter the collected sap to remove any debris, then pour it into a large, shallow pan. Heat the sap over a wood fire or a stovetop to evaporate the water content. This process can take several hours.

  3. 3

    Finishing the Syrup

When the sap reduces to about 66% sugar content, it is ready to be filtered again to remove impurities. Continue boiling it until it reaches a temperature of 219°F (104°C) at sea level.

  4. 4

    Bottling

Once the syrup is finished, immediately pour it into pre-warmed, sterilized glass bottles or jars to preserve its freshness. Seal the containers tightly.
