    Prepare the Batter

    In a large bowl, mix together cornmeal, flour, baking powder, sugar, salt, and black pepper. In another bowl, combine the buttermilk and beaten egg. Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped onion.

    Heat the Oil

    In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Hushpuppies

    Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches for about 3-4 minutes or until golden brown, turning occasionally for even cooking. Remove and drain on paper towels.

    Make the Sweet Tea Butter

    In a small bowl, combine the softened butter and sweet tea. Mix until smooth and well combined. Refrigerate until ready to serve.
