Prepare the Pie Crust
Preheat your oven to 375°F (190°C). Roll out the pie crust and place it in a 9-inch pie plate. Prick the bottom with a fork and bake for 10-12 minutes until lightly golden. Remove from oven and let cool.

Layer the Ingredients
Slice the heirloom tomatoes and sprinkle salt and black pepper over them. In the baked pie crust, layer the sautéed shallots and garlic, followed by the sliced heirloom tomatoes. Top with the three cheese blend (mozzarella, cheddar, goat cheese).

Add Herbs and Cheese
Sprinkle fresh basil leaves over the cheese mixture and top with shaved Parmigiano-Reggiano.

Bake the Pie
Bake the pie in the preheated oven for 30-35 minutes or until the cheese is bubbly and golden brown. Remove from oven and let it cool for a few minutes before slicing.
