Dough Preparation

    Make the Dough

    In a large bowl, mix flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until dough forms. Wrap in plastic and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Filling

    In a bowl, combine goat cheese, candied cashews, and chopped arugula until mixed well. Set aside.

Pickled Red Onion Preparation

    Pickle the Onion

    In a saucepan, combine sliced red onion, white vinegar, sugar, and salt. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and let cool.

Fry the Hand Pies

    Assemble and Fry

    Roll out the dough and cut into 4-inch circles. Place a tablespoon of filling on one half of each circle. Fold over and seal edges with a fork. Heat vegetable oil in a deep pan to 350°F (175°C). Fry hand pies until golden brown, about 3-4 minutes each side. Drain on paper towels.

Aioli Preparation

    In a bowl, mix mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth.
