    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the Collard Greens

    Add the chopped collard greens to the pot. Stir well to coat the greens in the oil and aromatics.

    Pour in the Stock

    Pour in the smoked vegetable stock. Bring the mixture to a boil, then reduce the heat to low.

    Cover the pot and simmer the collard greens for about 45 minutes to 1 hour, or until they are tender and fully cooked.
