Marinate the Chicken
In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Waffle Batter
In a mixing bowl, combine the waffle mix, eggs, and milk. Whisk until smooth and set aside.

Dredge the Chicken
In a separate bowl, mix the all-purpose flour and cornstarch. Remove the chicken from the marinade and dredge each piece in the flour mixture, shaking off any excess.

Fry the Chicken
Heat the vegetable oil in a deep skillet over medium-high heat. Once hot, carefully place the chicken pieces in the oil and fry until golden brown and cooked through, about 7-10 minutes per side. Remove and drain on paper towels.

Preheat your waffle iron. Pour the waffle batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown.

Place a waffle on a plate, top it with a piece of fried chicken, and drizzle with maple syrup. Serve hot.
