Prepare the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, mix flour, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk until just combined.

Bake the Biscuits
Turn the dough onto a floured surface and knead gently. Roll out to about 1 inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes or until golden.

Prepare the Gravy
In a skillet over medium heat, cook the ground sausage until browned. Stir in flour and cook for 1-2 minutes. Gradually add milk, stirring constantly until the gravy thickens. Add black pepper and salt to taste.

Split the biscuits in half and place on plates. Ladle the sausage gravy generously over the biscuits and serve hot.
