Yuca Fries Preparation

    Prepare the Yuca

    Peel the yuca (cassava) using a sharp knife. Cut it into 4-inch long sections, then slice each section into thin strips resembling fries.

    Boil the Yuca

    Place the yuca fries in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes until they are tender but not falling apart. Drain and let cool.

    Fry the Yuca

    In a large frying pan, heat the vegetable oil over medium-high heat. Once hot, add the cooled yuca fries in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per batch. Transfer to a paper towel-lined plate and sprinkle with salt and pepper.

    Mix the Sauce

    In a small bowl, combine mayonnaise, sriracha sauce, lime juice, garlic powder, and chopped cilantro. Mix well until all ingredients are fully incorporated.
