Method

Preparing the Tostones

    Peel the Plantains

    Using a sharp knife, cut off the ends of each green plantain. Make a shallow slit along the length of the plantain and carefully peel off the skin.

    Slice the Plantains

    Cut the peeled plantains into 1-inch thick slices. This will allow them to fry evenly.

    Fry the Plantains (First Fry)

    In a large skillet, heat the vegetable oil over medium heat. Once hot, add the plantain slices in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes, or until they are lightly golden. Remove from the oil and drain on paper towels.

    Flatten the Plantains

    Using a flat surface or a tostonera (plantain press), gently flatten each fried plantain slice to about half an inch thick.

    Fry the Plantains (Second Fry)

    Return the flattened plantains to the hot oil and fry again for an additional 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels again.

Making the Garlic Sauce

    Prepare the Sauce

    In a small bowl, combine the minced garlic cloves, mayonnaise, lemon juice, and salt. Mix well until all ingredients are thoroughly blended.

    Serve

    Serve the crispy tostones hot with a side of garlic sauce for dipping.
