Grits Preparation

Cook the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Stir well.

Simmer the Grits

Reduce heat to low and cover. Cook the grits for about 20-25 minutes, stirring occasionally until thick and creamy.

Add Butter and Cheese

Once the grits are cooked, stir in 2 tbsp of butter and 1 cup of cheddar cheese until melted and well combined. Set aside.

Shrimp & Sausage Preparation

Sauté the Sausage

In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 8 oz of sliced Andouille sausage and cook until browned, about 3-4 minutes.

Add Garlic

Add 3 minced cloves of garlic to the skillet and sauté for an additional 1 minute until fragrant.

Cook the Shrimp

Add 1 lb of peeled and deveined shrimp to the skillet. Sprinkle with 1 tsp paprika, 1 tsp cayenne pepper, and 1 tsp black pepper. Cook for 3-4 minutes or until shrimp are pink and opaque.

Finish with Scallions and Lemon Juice

Stir in the chopped scallions and 2 tbsp of lemon juice. Cook for an additional 1-2 minutes, then remove from heat.
