In a bowl, mix mustard seeds, cumin seeds, coriander powder, turmeric powder, and red chili powder. Set aside.

Marinate the Pork

Combine pork cheeks with vinegar, salt, and half of the spice mix. Let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Cook the Base

In a large pot or Dutch oven, heat oil over medium heat. Add chopped onions and sauté until golden brown.

Add Aromatics

Stir in minced garlic and grated ginger, cooking for another 2-3 minutes until fragrant.

Add chopped tomatoes and cook until softened and reduced, about 5-7 minutes.

Add marinated pork cheeks and the remaining spice mix to the pot. Stir well to coat the pork.

Cover and simmer on low heat for about 2-3 hours, or until the pork is tender and the flavors are well combined. Stir occasionally and add water if necessary to prevent sticking.
