Method

Steak Preparation

  1. 1

    Season and Cook the Steak

Season the sirloin steaks with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and cook for 4-5 minutes on each side for medium-rare. Remove from the skillet and let rest for 5 minutes before slicing.

Fries Preparation

  1. 2

    Prepare the Fries

Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels; season with salt.

Tarragon Aioli Preparation

  1. 3

    Make the Aioli

In a small bowl, combine mayonnaise, finely chopped tarragon leaves, minced garlic, lemon juice, and salt. Mix until well combined. Adjust seasoning to taste.

Tomato Preparation

  1. 4

    Prepare the Tomato

Slice the ripe tomatoes and drizzle with olive oil. Season with salt and black pepper to taste.

Assembly

  1. 5

    Serve the Dish

On a plate, serve the sliced steak alongside a generous portion of handcut fries. Add a small bowl of tarragon aioli for dipping and garnish with the seasoned tomato slices.
