Prepare the Fries
Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels; season with salt.
Tarragon Aioli Preparation

Make the Aioli
In a small bowl, combine mayonnaise, finely chopped tarragon leaves, minced garlic, lemon juice, and salt. Mix until well combined. Adjust seasoning to taste.
Tomato Preparation

Prepare the Tomato
Slice the ripe tomatoes and drizzle with olive oil. Season with salt and black pepper to taste.
Assembly

Serve the Dish
On a plate, serve the sliced steak alongside a generous portion of handcut fries. Add a small bowl of tarragon aioli for dipping and garnish with the seasoned tomato slices.
