Pickled Red Onion Preparation

    Prepare the Pickled Red Onion

    Thinly slice the red onion and place it in a jar. In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat until the sugar dissolves, then pour over the onions. Let it sit for at least 30 minutes.

Tarragon Aioli Preparation

    Make the Tarragon Aioli

    In a small bowl, mix together mayonnaise, chopped fresh tarragon, lemon juice, minced garlic, salt, and pepper. Adjust seasoning to taste and set aside.

Burger Assembly

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

    Form and Cook the Burgers

    In a bowl, mix ground Angus beef with salt and black pepper. Form into two patties. Grill or pan-fry the patties over medium-high heat for about 4-5 minutes on each side, adding a slice of cheddar cheese during the last minute to melt.

    Assemble the Burger

    Toast the burger buns. On the bottom half, spread a layer of tarragon aioli, add the cooked burger patty, top with crispy bacon, pickled red onions, and a handful of arugula. Place the top half of the bun and serve.
