Preheat the broiler. Season the cod fillets with olive oil, salt, and black pepper. Place on a baking sheet and broil for about 8-10 minutes, or until the fish flakes easily with a fork.

Cook the Succotash
In a large skillet, heat vegetable broth over medium heat. Add red onion and cook until soft. Then stir in corn, zucchini, red bell pepper, and cherry tomatoes. Season with salt and black pepper, and cook until vegetables are tender. Stir in fresh basil before serving.

Make the Herbed Breadcrumbs
In a small bowl, combine breadcrumbs, parsley, garlic, olive oil, salt, and black pepper. Mix until evenly coated.

On a plate, place a scoop of succotash, top with a broiled cod fillet, drizzle with charred leek salsa verde, and sprinkle herbed breadcrumbs on top. Enjoy!
