Fish Preparation

    Broil the Cod

    Preheat the broiler. Season the cod fillets with olive oil, salt, and black pepper. Place on a baking sheet and broil for about 8-10 minutes, or until the fish flakes easily with a fork.

Succotash Preparation

    Cook the Succotash

    In a large skillet, heat vegetable broth over medium heat. Add red onion and cook until soft. Then stir in corn, zucchini, red bell pepper, and cherry tomatoes. Season with salt and black pepper, and cook until vegetables are tender. Stir in fresh basil before serving.

Salsa Verde Preparation

    Prepare the Salsa Verde

    Char the leeks on a grill or in a pan until softened and slightly blackened. In a bowl, combine charred leeks, parsley, capers, lemon juice, olive oil, salt, and black pepper. Mix well and set aside.

Herbed Breadcrumbs Preparation

    Make the Herbed Breadcrumbs

    In a small bowl, combine breadcrumbs, parsley, garlic, olive oil, salt, and black pepper. Mix until evenly coated.

Assembly
