Prepare the Ingredients
Chop the little tomatoes, grilled summer squash, and fresh herbs. Set aside.

Whisk the Eggs
In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.

Cook the Omelette
Heat a non-stick skillet over medium heat and add a small amount of olive oil or butter. Pour in the egg mixture and let it cook for about 2-3 minutes, gently pushing the edges towards the center.

Add Fillings
Once the eggs are mostly set, add the chopped tomatoes, grilled summer squash, and crumbled chevre evenly over one half of the omelette.

Fold and Serve
Carefully fold the omelette in half and let it cook for another minute. Slide onto a plate and garnish with fresh herbs and a dollop of tomato jam. Serve with slices of baguette on the side.
