    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern. Rub salt, black pepper, garlic powder, and olive oil all over the pork belly. Place in a roasting dish and cook for about 2.5 to 3 hours or until the meat is tender and the skin is crispy.

    Make Braised Red Cabbage

    In a large pot, melt butter over medium heat. Add sliced onion and cook until soft. Add shredded red cabbage, apple cider vinegar, sugar, salt, and black pepper. Stir well, cover, and let simmer for about 45 minutes, stirring occasionally, until the cabbage is tender.

    Assemble the Sandwich

    Once the pork belly is cooked, slice it into portions. Take the pressed sub rolls, spread mayonnaise on the inside, and layer with braised red cabbage and slices of pork belly. Add a dill spear on the side.
