Dough Preparation

    Activate Yeast

    In a small bowl, warm the milk to about 110°F (43°C). Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture, melted butter, and eggs. Mix until a dough forms.

    Knead Dough

    Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place until doubled, about 1 hour.

Filling and Assembly

    Prepare Filling

    In a bowl, mix together the brown sugar, cinnamon, and chopped almonds. Set aside.

    Roll Out Dough

    After the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.

    Add Filling

    Spread the softened butter over the dough, then sprinkle the filling mixture evenly on top.

    Shape Schnecke

    Starting from one edge, roll the dough tightly into a log. Cut into equal pieces (about 1 to 1.5 inches thick) and place them cut-side up in a greased baking dish.

    Cover the dish with a cloth and let the rolls rise for another 30 minutes.

Baking

    Preheat Oven

    Preheat the oven to 350°F (175°C).

    Bake

    Bake the rolls for 25-30 minutes until golden brown.

    Prepare Glaze

    While the rolls are baking, mix together the powdered sugar, milk, and vanilla extract until smooth.

    Once the rolls are done, let them cool slightly, then drizzle the glaze over the top.
