Prepare the Pork
Place the pork cutlets between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet.

Set Up Breading Stations
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

Bread the Cutlets
Dredge each pork cutlet first in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.

Fry the Schnitzels
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded cutlets in batches and fry for about 3-4 minutes on each side, or until golden brown and cooked through.

Drain and Serve
Remove the schnitzels from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve hot with your choice of side.
