    In a small bowl, warm the milk (not boiling) and dissolve the yeast in it. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour, sugar, and salt. Add melted butter, eggs, vanilla extract, and the yeast mixture. Mix until a dough forms.

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    While the dough is rising, prepare the filling by combining the almond paste with some powdered sugar until it’s smooth and easy to spread.

    Shape the Mandelhornchen

    Once the dough has risen, punch it down and roll it out into a large rectangle. Spread the almond filling evenly over the surface. Cut the dough into triangles and roll each triangle from the wide end to the point to form crescent shapes.

    Place the rolled crescents on a baking sheet lined with parchment paper. Let them rise for another 30 minutes.
