Preparation and Assembly

    Prepare the Falafel Mixture

    Drain and rinse the canned chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Pulse until a coarse mixture forms. Do not over-process.

    Shape the Falafel

    Form the mixture into small balls or patties (about 1.5 inches in diameter). Place on a baking tray.

    Fry the Falafel

    Heat the vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the falafel in batches, frying them until golden brown (about 3-4 minutes on each side). Remove and drain on paper towels.

    Prepare the Naan and Vegetables

    Warm the vegan naan in a skillet or oven. Prepare the vegetables by slicing the tomato, cucumber, and red onion, and shredding the cabbage.

    Assemble the Falafel Döner

    On each piece of naan, place 3 fried falafel. Top with shredded cabbage, diced tomato, sliced cucumber, and red onion. Drizzle with tahini and spicy red sauce.

    Serve immediately with a side choice of your liking, such as fries or a salad.
