Making Elderflower Syrup

Prepare the Elderflower
Gently rinse the elderflower blossoms in cold water to remove any dirt or insects. Shake off excess water and set aside.

Combine Ingredients
In a large saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved.

Add Elderflower and Lemon Juice
Once the sugar has dissolved, remove the saucepan from heat. Add the elderflower blossoms, lemon juice, and citric acid. Stir to combine.

Steep the Mixture
Cover the saucepan and let the mixture steep for 24 hours at room temperature.

Strain the Syrup
After steeping, strain the mixture through a fine-mesh sieve or cheesecloth into a clean bottle or jar, discarding the solids.

Seal the bottle or jar and refrigerate the elderflower syrup. It should keep for up to 2 weeks in the refrigerator.
