Dough Preparation

    Activate Yeast

    In a small bowl, dissolve the yeast and sugar in warm milk and water. Let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large bowl, combine flour, salt, and matcha powder. Add the frothy yeast mixture and mix until a dough forms.

    Knead Dough

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let it rise for about 1 hour, or until doubled in size.

Butter Layering

    Prepare Butter

    While the dough is rising, take the cold butter and pound it into a flat rectangle between two sheets of parchment paper. Refrigerate until needed.

    Incorporate Butter

    Once the dough has risen, roll it out into a large rectangle. Place the chilled butter in the center and fold the dough over the butter. Roll out and fold again to create layers. Repeat this process 3-4 times.

Shaping and Baking

    Shape Croissants

    Roll out the dough one final time into a large rectangle. Cut into triangles and roll each triangle tightly from the base to the tip. Place on a baking sheet lined with parchment paper.

    Egg Wash

    In a small bowl, whisk together the egg and milk. Brush the egg wash over each croissant.

    Bake

    Preheat the oven to 400°F (200°C). Let the croissants rise for another 30 minutes. Bake for 15-20 minutes or until golden brown.
