Directions

  1. 1

    Prepare the Ingredients

Preheat your oven to 400°F (200°C). Prepare the cabbage by slicing it into wedges, and dice the potatoes into small cubes.

  2. 2

    Roast the Cabbage and Potatoes

On a baking sheet, toss the cabbage wedges and diced potatoes with olive oil, smoked paprika, minced garlic, salt, and black pepper. Spread them out evenly and roast in the preheated oven for about 20-25 minutes, or until they are golden and crispy.

  3. 3

    Cook the Salmon

While the vegetables are roasting, heat a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Add a bit of olive oil to the skillet and sear the salmon for about 4-5 minutes per side, or until it is charred and cooked to your liking.

  4. 4

    Prepare the Smoked Tomato Butter

In a small saucepan, melt the butter over low heat. Add the halved cherry tomatoes and cook gently until they soften. Stir in a pinch of smoked paprika and season with salt and pepper. Remove from heat.

  5. 5

    Serve

Plate the roasted cabbage and potatoes, place the salmon on top, and drizzle the smoked tomato butter over the entire dish. Enjoy!
