    Prepare the Potatoes

    Preheat your oven to 350°F (175°C). Peel and thinly slice the potatoes using a mandoline or sharp knife. Rinse the slices in cold water and pat them dry with a towel.

    Make the Bechamel Sauce

    In a saucepan over medium heat, melt the butter. Add the flour and whisk for about 2 minutes until it forms a roux. Gradually whisk in the milk, continuing to stir until the mixture thickens. Season with salt, black pepper, and a pinch of nutmeg.

    Add the Cheese

    Remove the bechamel from heat and stir in the cheddar, swiss, and half of the grana padano cheese until melted and smooth.

    Assemble the Dish

    In a greased baking dish, layer half of the potato slices. Pour half of the cheese sauce over the potatoes. Repeat the layers with the remaining potatoes and cheese sauce, finishing with the remaining grana padano on top.

    Bake

    Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes or until the top is golden and bubbly.
