Cook the Kobe Beef
In a large skillet, heat olive oil over medium heat. Add the ground Kobe beef, season with salt and black pepper, and cook until browned and fully cooked, about 5-7 minutes. Drain excess fat.

Sauté the Vegetables
Add minced garlic and diced poblano peppers to the skillet with the beef. Cook for an additional 3-4 minutes until the peppers are tender.

Create the Queso Mixture
Reduce heat to low, then stir in the cream cheese and shredded cheddar cheese until melted and smooth. Add halved cherry tomatoes and mix well.

Stir in the chopped cilantro and adjust seasoning with more salt and pepper if needed. Cook for another 2 minutes to heat through.
