Gnocchi Preparation

    Cook the Potatoes

    Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Prepare the Dough

    Peel the warm potatoes and mash them in a bowl. Add the egg and salt, mixing until combined. Gradually add flour until a soft dough forms. You may not need all the flour.

    Shape the Gnocchi

    Divide the dough into sections and roll each section into a rope about ½ inch thick. Cut into 1-inch pieces. Optionally, you can use a fork to create ridges on each piece.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and let drain.

    Finish with Truffle and Chives

    In a skillet, heat the truffle oil over medium heat. Add the cooked gnocchi and sauté for 2-3 minutes until slightly crispy. Remove from heat and sprinkle with chopped chives before serving.
