    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

    Deglaze the Pot

    Once the onions are caramelized, add the dry white wine to deglaze the pot. Scrape any browned bits from the bottom and let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Pour in the beef broth, add the thyme, bay leaf, salt, and black pepper. Bring to a simmer and let cook for another 20 minutes.

    Prepare the Crostini

    While the soup is simmering, preheat the oven to 375°F (190°C). Cut the potato rolls in half, brush with olive oil, and sprinkle with garlic powder. Place them on a baking sheet and toast in the oven for about 10-15 minutes until golden.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top with gruyere cheese, and place under the broiler for 3-5 minutes until the cheese is melted and bubbly.

    Garnish with chopped chives and serve hot with the toasted potato roll crostini on the side.
