    Make the Dough

    On a clean surface, mound the flour and create a well in the center. Crack the eggs into the well, add the olive oil and salt. Using a fork, gradually incorporate the flour into the eggs until a shaggy dough forms.

    Knead the Dough

    Bring the dough together with your hands and knead it for about 8-10 minutes until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll each piece out using a pasta machine or a rolling pin to your desired thickness.

    Cut the Pasta

    Cut the rolled-out dough into your desired shapes, such as fettuccine, tagliatelle, or lasagna sheets.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the freshly cut pasta and cook for 2-4 minutes, or until al dente. Drain and serve with your favorite sauce.
