Wiener Schnitzel

    Prepare the Cutlets

    Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. Season both sides with salt and black pepper.

    Set Up Breading Station

    In three separate shallow bowls, place the flour in the first, beaten eggs in the second, and breadcrumbs in the third.

    Bread the Cutlets

    Dredge each cutlet in flour, shaking off the excess, then dip into the egg, and finally coat with breadcrumbs, pressing gently to adhere.

    Fry the Cutlets

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded cutlets and fry for about 3-4 minutes on each side, until golden brown. Remove and drain on paper towels.

    Serve the schnitzel immediately with lemon wedges on the side.

Potato Salad

    Cook the Potatoes

    Place the Yukon gold potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool, then peel and cut into cubes.

    In a large bowl, whisk together the white wine vinegar, olive oil, salt, and black pepper.

    Combine Salad Ingredients

    Add the potato cubes and finely chopped red onion to the dressing and mix gently. Stir in the chopped parsley.

    Refrigerate the potato salad for at least 30 minutes before serving.

Cucumber Salad

    Slice the Cucumbers

    Thinly slice the cucumbers and place them in a bowl. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.

    In a small bowl, mix together the white wine vinegar, sugar, and black pepper.

    Rinse and drain the cucumbers, then add the dressing and chopped dill. Toss well to combine.
