    Set up your breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs.

    Dredge each veal cutlet in the flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the cutlet with breadcrumbs, pressing gently to adhere.

    In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers. You can test the temperature by dropping a breadcrumb in; if it sizzles, the oil is ready.
