Method

Appetizer

  1. 1

    Prepare the Tomatoes

Wash the cherry tomatoes under running water, then pat them dry with a paper towel. Cut them in half and place them in a mixing bowl.

  2. 2

    Add Basil and Dressing

Chop the fresh basil leaves and add them to the bowl with tomatoes. In a separate small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper.

  3. 3

    Combine and Serve

Pour the dressing over the tomato and basil mixture, toss gently to combine. Let it marinate for 10 minutes before serving.

Main Course

  1. 4

    Marinate the Chicken

In a large bowl, combine lemon juice, minced garlic cloves, fresh rosemary, salt, black pepper, and olive oil. Mix well. Add chicken breasts to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes.

  2. 5

    Preheat the Grill

Preheat your grill to medium-high heat. If using an oven, preheat it to 375°F (190°C).

  3. 6

    Cook the Chicken

Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). If baking, place on a baking sheet and bake for 25-30 minutes.

  4. 7

    Let Rest and Serve

Once cooked, remove the chicken from the grill or oven and let it rest for 5 minutes before slicing. Serve alongside the marinated cherry tomato salad.
