Steak Preparation

    Season the dry-aged prime strip steak with salt and black pepper. Heat a grill or skillet over medium-high heat and cook the steak for about 3-4 minutes on each side for medium rare, or until your preferred doneness. Remove from heat and let it rest for 5 minutes before slicing thinly.

    Prepare the Soba Noodles

    In a large pot, bring water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    While the noodles are cooking, julienne the carrot, shred the red cabbage, and slice the cucumber thinly. Chop the scallions, separating the white and green parts.

Dressing Preparation

    In a bowl, whisk together the lingonberry jam, soy sauce, rice vinegar, sesame oil, sriracha sauce, and grated ginger. Adjust seasoning with salt and black pepper to taste.

    In a large bowl, combine the cooked soba noodles, sliced steak, julienned carrot, shredded red cabbage, cucumber slices, and chopped scallions. Pour the dressing over the salad and toss gently to combine.
