  2. 2

    Prepare Dressing

In a bowl, mix together mayonnaise, mustard, finely chopped celery, diced red onion, salt, and black pepper.

  3. 3

    Combine

Once potatoes are cool, cut them into cubes and add to the dressing. Mix gently. Stir in chopped parsley before serving.

Sauerkraut

  1. 4

    Prepare Sauerkraut

In a saucepan over medium heat, add sauerkraut, caraway seeds, apple cider vinegar, and salt. Stir and heat through for about 5-7 minutes.

Red Cabbage

    Cook Cabbage

Shred the red cabbage and place it in a pot. Add apple cider vinegar, sugar, and salt. Cook over low heat for about 30 minutes until tender.

Sautéed Spinach

Parsley Potatoes

  1. 7

    Boil Potatoes

In a pot, boil baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.

  2. 8

    Finish with Butter and Parsley

Toss the cooked potatoes with melted butter and chopped parsley. Season with salt to taste.

Creamed Spinach

Slice cucumbers and red onion thinly. Place in a bowl.

  2. 12

    Make Dressing

In a separate bowl, mix apple cider vinegar, sugar, and salt.

  3. 13

    Combine

Pour dressing over cucumbers and onions. Toss to combine and let sit for at least 30 minutes before serving.

Seasonal Vegetables

Wash and chop zucchini, bell pepper, and carrot into bite-sized pieces.
