Prepare the Dough
In a small bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough begins to form.

Knead the Dough
Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.

First Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape and Second Rise
Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan or shape it into a round loaf and place it on a baking sheet. Cover and let it rise for another 30 minutes.

Bake the Bread
Preheat the oven to 375°F (190°C). Bake for 30-35 minutes until golden brown and sounds hollow when tapped. Let cool on a wire rack.

Prepare the Butter
In a bowl, soften the unsalted butter at room temperature. Mix in sea salt and fresh herbs if using. Blend until well combined and smooth.

Serve
Transfer the butter to a serving dish and refrigerate until ready to serve.
Topfenaufstrich

Mix the Spread
In a mixing bowl, combine the Hemme Bros. Quark cheese, chopped chives, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and creamy.

Transfer the topfenaufstrich to a serving bowl. Chill in the refrigerator until ready to serve.
