Method

Pork Roast

    Prepare the Pork

    Preheat your oven to 350°F (175°C). Season the Duroc pork loin generously with salt and black pepper on all sides.

    Sear the Pork

    In a large skillet over medium-high heat, heat the olive oil. Add the pork loin and sear for about 3-4 minutes on each side until golden brown.

    Add Aromatics

    Add minced garlic, chopped rosemary, and diced onion to the skillet, cooking for another 2 minutes until fragrant.

    Roast the Pork

    Transfer the pork and all contents of the skillet into a roasting pan. Pour the broth around the pork and cover with foil. Roast in the oven for about 1.5 hours, or until the internal temperature reaches 145°F (63°C).

    Rest the Meat

    Remove the pork from the oven and let it rest for 10-15 minutes before slicing.

Bread Dumplings

    Prepare the Bread

    Cut the stale bread rolls into small cubes and place them in a large mixing bowl.

    Make the Dough

    Heat the milk until warm and pour it over the bread cubes. Let sit for about 10 minutes. Add eggs, flour, salt, and parsley. Mix until combined.

    Form Dumplings

    Bring a large pot of salted water to a boil. Wet your hands and form the dough into dumplings, about the size of a golf ball.

    Cook the Dumplings

    Drop the dumplings into the boiling water. Cook for about 15 minutes, until they float to the surface. Remove with a slotted spoon.

Red Cabbage

    Prepare the Cabbage

    Slice the red cabbage thinly and chop the onion. In a large pot, melt the butter over medium heat.

    Cook the Cabbage

    Add the sliced cabbage and onion to the pot. Stir in vinegar, sugar, and salt. Cook for about 30 minutes until the cabbage is tender, stirring occasionally.

    Add Apple

    Add the sliced apple to the pot and continue cooking for another 10 minutes.

Pork Sauce

    Make the Sauce

    In a small saucepan, heat the pork drippings over medium heat. Whisk in the flour and cook for 1-2 minutes.

    Slowly whisk in the broth, cooking until the sauce thickens, about 5 minutes. Season with salt and black pepper to taste.
